About this place
After you take your seat and place your order, a steaming cup of chawanmushi—savory steamed egg custard—is served first. Lunch at Nishitani, inside a building in Ginza 6-chome, begins with this smooth, dashi-rich custard. Once the warmth has settled in, sushi is set before you, each piece showing the care and skill of its preparation.
The lunch menu is arranged in three straightforward sets—Matsu, Take and Ume—and each includes chawanmushi and soup. The preparation brings out each ingredient’s character: squid is scored with fine cuts, octopus is served with salt to highlight its natural sweetness, and the conger eel is gently simmered until tender and fluffy. A cold beer poured into a glass makes a pleasing companion between pieces of sushi.
With counter and table seating, the restaurant has a calm atmosphere in which to take your time over the meal. It is a Ginza sushi restaurant to keep in mind for an easygoing lunch or a more leisurely evening meal.
